I'm sitting here trying to plan my meals out for this week and I'm coming up with

Because it's summer... and really really hot... I crave fruit and salads. I try not to heat up the oven (and therefor the whole house) if I can help it.
SO.....
If you would be so kind as to share a favorite recipe of yours that your family eats in the summer... or anytime for that matter... I would be ever so grateful.
In fact I'll share one with you as thanks...
Teriyaki Chicken Salad
1 package spinach
12 oz. spiral pasta
1/4 c. roasted sunflower seeds
3 c. shredded chicken (if you want you can use canned)
1/2 c. green onions
Dressing (mix all together)
1/2 c. oil
1/3 c. soy sauce
1/3 c. white vinegar
3 Tbsp. sugar
1/4 tsp. salt
1/8 tsp. pepper
Cook, drain, and cool pasta and chicken. Add dressing to pasta and chicken. Add spinach, onions, and sunflower seeds when read to eat.
This recipe makes a lot. You can cut it in half or have some the next day for leftovers... it's really good the next day after the flavors have blended better.

Summer is always tricky when it comes to menus. It is funny because when you said you were looking for recipes the first one that came to mind is the one you posted. One of my favorite things in the summer is pocket bread. You can put all kinds of fillings in them. I like diced ham, cheese, lettuce, tomatoes and sprouts with ranch dressing. Beef or chicken also work. You can use your imagination to come up with fun combinations. Avocados go well with the chicken. Some favorite vegie dishes are yellow summer squash with onions and crumbled bacon or zucchini with red onions sauted in olive oil with a little garlic salt. A great chef salad is another favorite. Good luck and pass on some of your findings, after 30 years I could use some new ideas myself.
